Wild Blueberry Apple Salsa
1 Honey crisp apple (or your favourite apple), diced
1/2c Cilantro, chopped
1/2c Red onion, diced
1/2c Van Dyk's Wild Blueberry Juice
1tsp Sea salt
2 Limes, juice and zest
1 Lemon, juice only
2tbsp Olive oil
Toss the apple, red onion and cilantro in a medium sized bowl. Add the remaining ingredients and chill for at least 30 minutes. Before serving garnish with additional cilantro.
Can be served with your favourite white fish, as an accompaniment to grilled scallops, or with crisp nacho chips.
